A rich steakhouse-style gravy with caramelized yellow onions, browned button mushrooms, reduced red wine, and beef broth.
Ingredients
Yellow Onions (Sliced, Medium): 2
White Button Mushrooms (Sliced, inch thick): 12 Medium-To-Large
Unsalted Butter (Divided): 3 TBSP
Olive Oil: 1 TBSP
Dry Red Wine: 3/4 Cup
Beef Broth: 5 1/2 Cup
Worcestershire Sauce: 1 TBSP
Soy Sauce: 1 TSP
Dried Thyme: 1/2 TSP
Dried Rosemary (Crushed, Finely): 1/4 TSP
Garlic (Minced, or ½ teaspoon garlic powder): 2 Clove
All-Purpose Flour: 1 TBSP
Brown Sugar (optional): 1 TSP
Freshly Ground Black Pepper (Optional): 1/4 TSP
Salt (Optional)
Beef Bouillon (Optional, to intensify flavor)
Instructions
Heat a large 12-inch skillet over medium heat.
Add 1 tablespoon butter and the olive oil.
Add sliced onions and a small pinch of salt.
Cook for 20–25 minutes, stirring occasionally, until deeply golden and caramelized.
Reduce heat as needed to prevent burning.
Add small splashes of water if onions begin sticking.
Transfer onions to a bowl.
Increase heat to medium-high and add 1 tablespoon butter.
Add sliced mushrooms, spreading into an even layer.
Allow to brown undisturbed for 2–3 minutes before stirring.
Continue cooking for 8–10 minutes, until moisture evaporates and mushrooms develop golden-brown edges.
Work in batches if necessary.
Return caramelized onions to the skillet.
Reduce heat to medium.
Add garlic, thyme, rosemary, black pepper, and optional brown sugar.
Stir for approximately 1 minute until fragrant.
Sprinkle flour evenly over the mushroom and onion mixture.
Stir thoroughly and cook for 1–2 minutes to eliminate the raw flour taste.
Slowly pour in red wine, stirring and scraping the browned bits from the skillet bottom.
Simmer for 5–7 minutes, allowing the wine to reduce by approximately half.
Gradually add beef broth while stirring.
Add Worcestershire sauce and soy sauce.
Bring to a gentle simmer.
Simmer uncovered for 8–10 minutes, stirring occasionally, until the gravy reaches a smooth, medium-thick consistency that coats the back of a spoon.
Add additional broth if too thick.
Taste and adjust seasoning.
If additional beef flavor is desired, stir in a small amount of beef bouillon, tasting carefully to avoid oversalting.
Remove from heat.
If preparing ahead, cover and set aside until the steaks are nearly ready.
Refrigerate if holding longer than 2 hours.
Just before serving, gently reheat over low heat.
Add a splash of broth if needed.
Remove from heat and stir in the remaining 1 tablespoon cold butter until melted and incorporated, creating a glossy finish.
Spoon warm gravy over freshly cooked ribeye steaks or serve alongside.
If available, incorporate 1–2 tablespoons of steak pan juices into the gravy before adding the finishing butter.
Note: This rich steakhouse-style gravy combines deeply caramelized yellow onions, browned button mushrooms, reduced red wine, and savory beef broth. Worcestershire and a small amount of soy sauce provide additional umami without overpowering the beef.
Note: The gravy can be prepared entirely before cooking the steaks. Reserve the final butter addition until reheating for the best texture and shine.
Note: For a more sauce-like consistency, reduce slightly longer. For a thinner gravy, add additional beef broth.
Note: Excellent with grilled or pan-seared ribeye steaks, prime rib, roasted beef, or mashed potatoes.
