Mashed potatoes shaped into a volcano, filled with a Cheddar cheese and egg-yolk filling, then baked.
Ingredients
- Potatoes: 9
- Warm Milk: 1/2 Cup
- Butter: 1 TBSP
- Salt: 1 TSP
- Pepper: 1/2 TSP
- Grated Nutmeg (Grated)
- Butter: 1/4 Lbs.
- Egg Yolks: 2
- Grated Cheddar Cheese (Grated): 1/3 Cup
- Paprika: 1/2 TSP
- Egg (Beaten): 1
- Bread Crumbs: 1 TBSP
- Grated Cheddar Cheese (Grated): 1 TBSP
Instructions
- Peel potatoes and boil in lightly salted water, then drain.
- Mash the potatoes or put them through a food mill.
- Beat in the warm milk and the butter.
- Season with salt, pepper and nutmeg.
- Shape the mashed potatoes in an ovenproof dish into a volcano with a cavity in the middle like a crater.
- Melt the butter and stir in the cheese until melted.
- Add the egg yolks and simmer until thickened.
- Season with paprika.
- Pour the filling into the center and brush the volcano with the beaten egg.
- Sprinkle on the bread crumbs and the grated cheese.
- Bake in a 400°F oven for 10 minutes.
- Serve with fried frankfurters or sausages and bacon strips.
