Pasta with olive brine, gin or vodka, cream, Parmesan, and olives.
Ingredients
Kosher Salt
Spaghetti: 12 Oz.
Extra-Virgin Olive Oil: 2 TBSP
Garlic (Sliced): 4 Clove
Pitted Castelvetrano Or Green Olives (Pitted, torn into pieces 1/3 cup olive brine torn into pieces torn into pieces, torn into pieces 1/3 cup olive brine): 1 Cup
Lemon (Zested): 1
Gin Or Vodka: 1/3 Cup
Heavy Cream: 2/3 Cup
Finely Grated Parmesan (Grated, Finely, more for serving): 2/3 Cup
Fresh Parsley (Chopped): 1/3 Cup
Unsalted Butter: 3 TBSP
Instructions
In a large pot of boiling salted water, cook spaghetti, stirring occasionally, until al dente according to package directions.
Reserve 1 cup pasta water, then drain.
Meanwhile, in a large skillet over medium heat, heat oil.
Add garlic, olives, and lemon zest and cook, stirring frequently, until fragrant, 3 to 4 minutes.
Add gin and cook, stirring occasionally, until reduced by half, about 4 minutes.
Add cream, olive brine, and pasta and toss constantly, adding reserved pasta water 1 Tbsp. at a time if needed, until pasta is coated and sauce is emulsified.
Stir in Parmesan, parsley, and butter until butter is melted; season with salt.
Top with more Parmesan before serving.
