Instructions
For the dough:
In a small bowl, combine the active dry yeast, honey, and warm water. Let it sit for 5-10 minutes until foamy.
In a large mixing bowl, combine the bread flour and sea salt. Slowly pour in 2 tablespoons of olive oil and the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let it rise for 1-2 hours.
Preheat the oven to 400°F (200°C). Punch down the dough and press it into a greased baking sheet, creating dimples with your fingers.
In a small saucepan, melt 4 tablespoons of butter with the chopped parsley and grated garlic. Brush the garlic butter mixture over the dough.
Sprinkle the shredded mozzarella cheese over the dough, then drizzle with the remaining 2 tablespoons of olive oil. Sprinkle with finishing salt.
Bake for 20-25 minutes, until the focaccia is golden brown and the cheese is melted. Slice and serve warm.
