Kung Pao Chicken is the ultimate Chinese stir fry of wok fried chicken with vegetables and peanuts in a spicy brown sauce, quick and easy to make!
Ingredients
Soy Sauce: 1 TBSP
Rice Wine (Dried, or use sherry): 1 TBSP
Cornstarch: 2 TSP
Boneless Chicken (Cut Into Bite-Size Pieces (Use Chicken Breast (chicken thighs or a combination cut into bite size pieces use chicken breast chicken thighs or a combination): 1 Lbs.
Light Soy Sauce: 2 TBSP
Dark Soy Sauce: 1 TBSP
Chinese Black Vinegar (or use balsamic vinegar): 1 TBSP
Hoisin Sauce: 2 TSP
Sesame Oil: 1 TSP
Honey: 1 TSP
Ground Sichuan Peppercorns ) (black pepper is an ok substitute): 1/2 TSP
Chili Flakes: 1 TSP
Vegetable Oil (or use sesame oil): 2 TBSP
Dried Chinese Peppers ) (Whole, or use chili de arbol see recipe notes): 10
Fresh Chili Peppers: 2
Scallions (Chopped): 4
Garlic (Minced): 3 Clove
Roasted Peanuts (Chopped, scallions spicy chili flakes): 1/2 Cup
Extra Roasted Peanuts (Chopped, scallions spicy chili flakes)
Instructions
For the marinade:
In a bowl, mix together soy sauce, rice wine, and cornstarch.
Add the chicken pieces to the marinade and let it sit for 15 minutes.
For the sauce:
In a separate bowl, combine light soy sauce, dark soy sauce, Chinese black vinegar, hoisin sauce, sesame oil, honey, ground Sichuan peppercorns, and chili flakes.
Mix well and set aside.
For the stir fry:
Heat vegetable oil in a wok or large skillet over high heat.
Add dried Chinese peppers and fresh chili peppers, stir fry for 30 seconds.
Add garlic and scallions, continue to stir fry for another minute.
Add the marinated chicken and stir fry until cooked through.
Pour in the sauce mixture and stir well to coat the chicken.
Add chopped roasted peanuts and extra peanuts, continue to stir fry for another minute.
Serve hot and enjoy!
