These twice-baked potatoes are full of cheesy goodness. The potatoes are topped with crispy bacon and green onion for the ultimate comfort food!
Ingredients
Baking Potatoes (Large): 4
Bacon: 8 Slice
Sour Cream: 1 Cup
Shredded Cheddar Cheese (Shredded, Divided, divided): 1 Cup
Green Onions (Divided, Sliced, sliced): 8
Milk: 1/2 Cup
Butter: 4 TBSP
Salt: 1/2 TSP
Pepper: 1/2 TSP
Instructions
Gather the ingredients.
Preheat the oven to 350 degrees F (175 degrees C).
Bake potatoes in the preheated oven until tender, about 1 hour.
Set potatoes aside until cool enough to handle.
Meanwhile, cook bacon in a large, deep skillet over medium-high heat until evenly brown.
Drain, crumble, and set aside.
Slice potatoes in half lengthwise; scoop flesh into a large bowl.
Reserve skins.
Add sour cream, ½ cup cheese, ½ green onions, milk, butter, salt, and black pepper to potato flesh; mix with a hand mixer until well blended and creamy.
Spoon potato mixture into reserved potato skins; top with remaining ½ cup cheese, remaining ½ green onions, and bacon.
Bake in the preheated until cheese is melted, about 15 minutes.
