A tomato, vodka, cream, bacon, garlic and oregano sauce with optional chilli.
Ingredients
- Onion: 1
- Garlic: 1 Bulb
- Streaky Bacon (leave out for vego vegan): 4 Rashers
- Fresh Tomatoes (Fresh): 1000 G
- Fresh Oregano (Fresh)
- Thickened/Heavy Cream (leave out for vegan)
- Vodka (approx): 60 Ml
- Chicken/Veg Stock: 2/3 Cup
- Fresh Chilli (Optional (Optional, Fresh, fresh)
- Pepper
- Olive Oil
- Butter (can just use oil if vegan)
- Fresh Basil (Fresh)
- Parmesan Cheese
- Chicken Breast
- Pasta
- Toast
Instructions
- Peel and chop the onion.
- Peel and mince the garlic.
- Chop the streaky bacon into small pieces.
- Chop the fresh tomatoes into small chunks.
- Pick the fresh oregano leaves from the stems.
- Chop the fresh chilli, if using.
- Grate the Parmesan cheese.
- Slice the chicken breast into thin strips.
- Cook the pasta according to package instructions.
- Toast the bread slices.
- Heat olive oil in a pan over medium heat.
- Add the chopped onion and cook until translucent.
- Add the minced garlic and cook for another minute.
- Add the chopped bacon and cook until crispy.
- Pour in the vodka and let it reduce slightly.
- Add the chopped tomatoes, oregano, chicken/veg stock, and fresh chilli, if using.
- Simmer the sauce for about 20 minutes.
- Stir in the thickened/heavy cream and season with pepper.
- Add the sliced chicken breast and cook until cooked through.
- Serve the sauce over cooked pasta.
- Garnish with fresh basil leaves and grated Parmesan cheese.
- Serve with toasted bread slices on the side.
