We had plates full of this stuff (and Divinity) every Christmas.
Ingredients
- Granulated Sugar: 3 Cup
- White Karo Syrup: 1/3 Cup
- Cream Of Tartar: 1/8 TSP
- Cocoa: 3 TSP
- Vanilla: 1 TSP
- Milk: 1/2 Cup
- Chopped Walnuts Or Pecans: 1 Cup
- Cream Or Evaporated Milk: 1/2 Cup
Instructions
- Mix sugar, cream of tartar, and cocoa in a large pan.
- Add milk, cream, and syrup.
- Stir until well mixed. Bring to a slow boil over a low fire stirring until sugar is dissolved.
- After it comes to a boil, cover for a while so any sugar clinging to the side of the pan will dissolve.
- Boil until it reaches the soft ball stage.
- Remove from the fire and add butter. Do not stir. Cover and set aside until just warm to the touch.
- Pour into mixing bowl and add vanilla. Beat until it holds shape.
- Add nuts if desired.
- Spread in buttered dish. Cut when cool.
