A wonderful meatless casserole.
Ingredients
- Zucchini: 4 Cup
- Onion: 1 Cup
- Butter: 1/2 Cup
- Parsley Flakes: 2 TSP
- Garlic Powder: 1/4 TSP
- Eggs (Beaten, well): 2
- Crescent Rolls: 8 Oz.
- Mustard: 2 TSP
- Salt: 1/2 TSP
- Pepper: 1/2 TSP
- Basil: 1/4 TSP
- Oregano: 1/4 TSP
- Shredded Cheese (Cheddar (muenster mozzarella cheddar muenster mozzarella, muenster): 2 Cup
Instructions
- Preheat oven to 375 °F.
- Cook zucchini and onion in butter until tender.
- Stir in parsley and seasonings.
- In large bowl, blend eggs and cheese, stir into vegetable mixture.
- Separate dough into 8 triangles. Place in pan. Press over bottom and sides to form a crust.
- Spread with mustard and pour zucchini mix into crust.
- Bake at 375 °F for 18 to 20 minutes until a knife inserted in center comes out clean.
- Let stand 10 minutes before serving.
