Like my cousin, my mom made me this for every birthday, up until I moved out of state at 40. So good. So wonderfully nostalgic.
Ingredients
- Shortening: 1/2 Cup
- Granulated Sugar: 1 1/2 Cup
- Red Food Coloring: 2 Oz.
- Cocoa (heaped): 2 TSP
- Buttermilk: 1 Cup
- Cake Flour: 2 1/4 Cup
- Eggs: 2
- Vinegar: 1 TBSP
- Vanilla: 1 TSP
- Salt: 1 TSP
- Baking Soda: 1 TSP
Instructions
- Preheat oven to 350 °F. Grease and flour three 8-inch cake pans.
- Cream shortening, sugar, and eggs.
- Make a paste of the cocoa and food coloring then add to the creamed mixture.
- Add buttermilk, alternating with sifted flour and salt.
- Add vanilla.
- Add baking soda to vinegar. (Hold over the bowl as it will foam.) Stir into to batter.
- Divide batter equally into the three prepared pans.
- Bake at 350 °F for 24-30 minutes, until a toothpick inserted in the center comes out clean.
- Cool completely on a wire rack.
