Ingredients
- Yellow Corn Meal: 1 Cup
- Salt: 1 TSP
- Eggs: 2
- Flour: 2 TSP
- Pepper: 1/2 TSP
- Canned Milk: 2 TSP
- Fish Fillets
Instructions
- Mix corn meal, flour, salt, and pepper.
- Beat eggs slightly and add milk, and blend well.
- Dip fish into egg mixture first, drain briefly.
- Roll in flour mixture to coat evenly.
- Place fish, without crowding, on hot oiled griddle.
- Fry until golden brown on one side then turn carefully.
- Brown on other side. Frying time is usually less than 5 minutes.
- Fish should be tender and moist inside but thoroughly done.
