Place the chops in a shallow dish and sprinkle them with the oil, vinegar, rosemary, and salt and pepper to taste. Turn them to coat evenly. Let the chops stand at room temperature while you prepare a medium-hot charcoal fire or preheat a gas grill or the broiler. Set a grill rack or broiler pan about 4 inches from the heat.
Grill or broil the chops for to 4 minutes per side for medium-rare. Serve immediately.
