Great Umami flavor in an outdoor meal on the light side.
Ingredients
Boneless Skinless Chicken Thighs: 2 1/2 Lbs.
Corn Starch (more if needed to coat all of the chicken): 1/2 Cup
Vegetable Oil: 1/4 Cup
Soy Sauce: 3/4 Cup
Brown Sugar: 1/2 Cup
Minced Fresh Ginger: 1 TBSP
Minced Garlic: 2 Clove
Water: 1/2 Cup
Green Onions Sliced
Butter Lettuce: 2 Heads
Instructions
Trim the chicken and cut into 2" pieces. In a large bowl, combine the chicken and corn starch. Toss until all the chicken is coated. Add extra corn starch if needed to make sure all chicken is coated.
In a saucepan or microwave safe bowl combine the soy sauce, water, brown sugar, garlic, and ginger. Heat until all of the sugar is dissolved.
Preheat griddle to medium high heat.
Add the oil to the griddle.
Add the chicken to the griddle and cook until it's crispy on the outside.
Add the sauce and half of the sliced green onions to the chicken and let the saken for about 1 minute.
Remove the chicken from the heat. Serve in individual lettuce leaves and garnish with sliced green onions.
Optional: You can also serve with cooked white rice in the lettuce wraps. Just add the rice and then the chicken and sauce on top.
