In a heavy bottomed Dutch oven or large wide pot, over medium heat, add chicken broth, water, butter and all seasonings (poultry seasoning, onion powder, garlic powder, salt, parsley, basil, and pepper). Cover and bring to a boil.
Meanwhile, cut chicken breast into bite sized pieces. Add to the pot. Stir to combine and cover.
In a sealable container (such as a large mason jar) combine flour and milk. Seal tightly and shake vigorously to combine well. You will create a smooth flour mixture for thickening your sauce called a slurry. Slowly pour the slurry into the pot, stirring constantly. Add frozen vegetables and cover.
Meanwhile combine dumpling ingredients in a medium bowl. Mix well with a fork. Remove cover from the soup pot and stir well.
Drop dumplings into the soup one tablespoon at a time, use a 1 tablespoon scoop to make it even easier. Reduce heat to simmer, cover and cook until soup is thick enough to coat the back of a spoon, about 10 minutes.
Notes:
You can thicken this dish by adding more flour, or even cornstarch. Create a slurry with either of these ingredients and milk or water, then stir into your broth base until you get your desired consistency
Add fresh seasonings. If you want to add a bit of fresh thyme to this dumplings recipe, it’s a great way to add more flavor.
Minced garlic is also a great choice, and even a few bay leaves can help bump up the taste.
Test with a Toothpick. When your stew is close to ready, poke a dumpling with a toothpick. Your dumplings will be ready once the toothpick comes out clean.
If there’s some residue on the toothpick, give them a few more minutes to finish cooking.
The biscuits will thicken the soup quite a bit. You can use fewer biscuits or add additional chicken broth if you don’t want such a thick bowl of comfort food. Also note that the dish will thicken as it cools.
Modifications for Slow Cooker or for speed
1. Use dark meat if slow cooking. When doing this recipe for Instant Pot/Slow Cooker use boneless, skinless, thighs for a richer chicken flavor- the cooking time should be the same. You will need about 1 pound total.
2. Keep extra broth handy. Since the biscuit dough will thicken the dish quite a bit, feel free to add extra liquid as needed.
The mixture will also continue to thicken as it cools — just adjust accordingly.
3. Do I need to cook chicken before adding it to the crockpot/instant pot?
Not at all! It’s perfectly safe to add raw chicken to a slow cooker or instant pot when it will be cooked for a minimum of 4-5 hours.
4. How do you keep dumplings from dissolving in chicken and dumplings?
It’s important that once you drop the soft dough into the soup recipe, that you don’t stir.
Variations
Dumpling Variations:
Frozen Biscuit dough
You can use frozen biscuit dough (Grands have been suggested) instead of making your own dumplings. Allow buiscuits’ dough to come to room temperature and cut them up in triangles/wedges.
Bisquick Dumplings
2 cups Bisquick mix
2/3 cups milk
Mix and drop from a spoon, drop-biscuit style.
Why are my Bisquick dumplings not fluffy?
It’s important to note that for the dumpling recipe, you don’t want to overmix. Mix until a sticky dough forms, but that’s about it.
Will the dumplings still cook if they float to the top?
Yes, they will still cook through when this happens. I just dunk them from time to time because I like them all juicy.
To check if drop dumplings are cooked through, remove one from the pot and cut it in half. It should be fluffy and dry in the center.
Broth/Soup Variations:
To make things quicker:
2 cans condensed cream of chicken soup, or 3 cups Homemade Cream of Chicken Soup
And
6 cups chicken broth, low sodium
Or:
For a richer soup:
4 cups chicken broth (you can add additional broth at the end to thin chicken and dumplings)
And
1/4 cup heavy cream
Note: Heavy cream really adds a nice richness and creaminess to the dish. You can substitute milk, or mix the two, or skip it altogether if you wish.
Precooked Chicken: This recipe also works well with turkey cutlets, or with rotisserie chicken if you’re in a hurry. Leftover shredded rotisserie chicken works great.
