This guy made this stuff for every company picnic. Always a good cool down on a hot day!
Ingredients
- Milk: 4 Cup
- Rice: 1 Cup
- Evaporated milk: 1 Cup
- Sugar: 1/2 Cup
- Vanilla extract: 1 TSP
- Eggs: 2 Each
- Raisins: 1 Cup
- Cinnamon (For Sprinkling): 1 TSP
Instructions
- In a saucepan, combine milk, rice, evaporated milk, and sugar.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally.
- In a small bowl, whisk together eggs and vanilla extract.
- Slowly pour the egg mixture into the rice mixture, stirring constantly.
- Continue to cook for another 2-3 minutes, until slightly thickened.
- Remove from heat and stir in raisins.
- Pour the pudding into serving dishes and sprinkle with cinnamon.
