Best French Onion Soup recipe I could find. Great broth, wonderful bread and super tasty and melty cheese.
Ingredients
- Unsalted Butter: 1/2 Cup
- Olive Oil: 2 TBSP
- Sliced Onions: 4 Cup
- Beef Broth: 5 Cup
- Dry Sherry: 2 TBSP
- Dried Thyme: 1 TSP
- Salt And Pepper To Taste
- French Bread: 4 Slice
- Provolone Cheese: 4 Slice
- Swiss Cheese (Diced): 2 Slice
- Grated Parmesan Cheese: 1/4 Cup
Instructions
- Melt butter with olive oil in large stockpot over medium heat. Add onions and cook until tender and translucent (do not brown), stirring constantly.
- Add beef broth, sherry, and thyme. Season with salt and pepper.
- Simmer for 30 minutes. Meanwhile, preheat oven broiler.
- Ladle soup into oven-safe bowls. Place one bread slice on each (may break to fit).
- Layer each with provolone, Swiss, and Parmesan.
- Place bowls on baking sheet and broil 2-3 minutes until cheese is bubbly and golden.
- Serve immediately - carefully, the bowls will be hot!
