Great potato soup with ground beef and cheese. Yummy good, no, really!
Ingredients
- Olive Oil: 2 TBSP
- Ground Beef: 1 Ib
- Onion (Diced): 1/2 Cup
- Garlic Cloves (Minced): 2 Each
- Potatoes (Diced, Peeled, and): 1 Lbs
- Low-Sodium Beef Broth: 4 Cup
- Milk (or heavy cream for a richer soup): 1 Cup
- Shredded Cheddar Cheese: 1 1/2 Cup
- Salt And Pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned.
- Stir in the diced onion and garlic, cooking until softened, about 3 minutes.
- Add the diced potatoes and beef broth.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes, or until the potatoes are tender.
- Use a potato masher to lightly mash some of the potatoes in the pot for a thicker consistency.
- Stir in the milk and shredded cheddar cheese until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve warm, garnished with green onions and extra cheese if desired.
