Place your flour tortillas on a plate and cover with a damp paper towel. Microwave for 30 seconds. Remove from the microwave and set aside. (This will make your tortillas easy to roll.)
Cook ground beef until done. Mix taco seasoning mix in the ground beef.
Take one flour tortilla and spread about 2 tablespoons of refried beans down the middle. Top beans with a ¼ cup of ground beef. Top beef with diced onions. Roll tortilla. Repeat until all tortillas are filled.
Place rolled tortillas seam down on lightly greased 9x13 baking dish.
Cover tortillas with red enchilada sauce.
Finely shred cheddar cheese.
Bake in the oven at 350 degrees for 15 minutes.
Allow your enchiritos to rest for 5 minutes. Top with sliced black olives and serve.
