Pampered chef's version of Chicken Orzo soup. Plenty of chicken and orzo in a nice Italian seasoned broth.
Ingredients
- Onion (Chopped): 1/2 Cup
- Garlic (Minced): 2 Clove
- Oregano (Dried): 1 1/2 TSP
- Chicken Broth: 8 Cup
- Black pepper: 1/2 TSP
- Water: 1 Cup
- Orzo: 1/3 Cup
- Chicken Breast (Chopped, Cooked): 1 1/2 Cup
- Zucchini (Sliced): 1 1/2 Cup
- Red Pepper (Diced, Roasted): 1 Cup
- Lemon juice: 2 TBSP
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add minced garlic and dried oregano, cook for another minute.
- Pour in chicken broth and water, bring to a simmer.
- Season with black pepper.
- Add orzo and cook until tender.
- Stir in chopped cooked chicken breast, sliced zucchini, and diced roasted red pepper.
- Simmer for a few more minutes to heat through.
- Finish with a squeeze of lemon juice before serving.
