Tender Ricotta Crumb Bars

Ingredients
Bars:
All-Purpose Flour: 2 Cup
Baking Soda: 1/2 TSP
Table Salt: 1/4 TSP
Unsalted Butter (Room Temp): 3/4 Cup
Filling:
Ricotta Cheese (Drained): 2 Cup
Granulated Sugar: 3/4 Cup
Eggs: 4 Each
Vanilla Extract: 1 TSP
Instructions
For the crust:
Preheat the oven to 350°F.
In a bowl, combine 2 cups of all-purpose flour, 1 1/2 tsp of baking soda, and 1 1/4 tsp of table salt.
Cut in 1 1/2 cups of unsalted butter until the mixture resembles coarse crumbs.
Press 2/3 of the mixture into the bottom of a greased baking dish.
For the filling:
In a separate bowl, mix together 2 cups of ricotta cheese, granulated sugar, 4 eggs, and 1 tsp of vanilla extract until smooth.
Pour the filling over the crust.
Sprinkle the remaining 1/4 cup of granulated sugar over the top.
Bake for 35-40 minutes or until set. Let cool before cutting into bars.
