A wonderful take on fruit cake. This delicious focaccia bread is outstanding!
Ingredients
- Focaccia
- Water, 105 - 120 Degree: 1 Cup
- Vegetable Oil: 2 TBSP
- All-Purpose Flour (Separated): 3 3/4 Cup
- Granulated Sugar: 3 TBSP
- Active Dry Yeast: 1 Pkg
- Table Salt: 1 TSP
- Lemon Zest: 1 TSP
- Cardamom: 1/2 TSP
- Candied Cherries Or Mixed Fruit (Chopped): 1/2 Cup
- Almonds (Chopped): 1/3 Cup
- Currants (Optional): 1/4 Cup
- Raisins (omit currant): 1/4 Cup
- Topping
- Unsalted Butter (Melted): 1 TBSP
- Granulated Sugar: 2 TBSP
Instructions
- For the dough:
- Combine water and vegetable oil in a bowl.
- Add 1- 1/2 cups flour, granulated sugar, yeast, salt, lemon zest, and cardamom. Mix well.
- Mix candied cherries or mixed fruit, almonds, currants, and raisins in a bowl.
- By hand, stir in cherries, almonds, currants or raisins and 1 - 1/2 cups flour until dough pulls cleanly away from the bowl. Add more flour if needed.
- Cover and let rise until doubled in size.
- For the filling:
- Roll out the dough and spread evenly in the cookie sheet.
- Brush with melted butter and prick dough with a fork. Cover and let rise in a warm place until light and doubled in size.
- For the topping:
- Melt unsalted butter and brush over the dough.
- Bake in a preheated oven until golden brown.
- Heat oven to 400 degrees. Uncover dough and sprinkle with 2 tbs sugar. Bake at 15 to 20 minutes until golden brown. Remove to serving tray. Cool 10 minutes and cut into wedges. Serve warm.
