Mix candied cherries or mixed fruit, almonds, currants, and raisins in a bowl.
By hand, stir in cherries, almonds, currants or raisins and 1 - 1/2 cups flour until dough pulls cleanly away from the bowl. Add more flour if needed.
Cover and let rise until doubled in size.
For the filling:
Roll out the dough and spread evenly in the cookie sheet.
Brush with melted butter and prick dough with a fork. Cover and let rise in a warm place until light and doubled in size.
For the topping:
Melt unsalted butter and brush over the dough.
Bake in a preheated oven until golden brown.
Heat oven to 400 degrees. Uncover dough and sprinkle with 2 tbs sugar. Bake at 15 to 20 minutes until golden brown. Remove to serving tray. Cool 10 minutes and cut into wedges. Serve warm.
