Light squeeky little mint joys. Good stuff!
Ingredients
- Large Eggs (Separated, Whites only): 2 Each
- Cream Of Tartar: 1/4 TSP
- Table Salt: 1/8 TSP
- Granulated Sugar: 1/2 Cup
- Mint Extract: 1/4 TSP
- Green Food Coloring (to 5 Drops): 3 Each
- Rainbow Sprinkles (if desired): 1 TBSP
Instructions
- Preheat the oven to 200°F.
- Line a baking sheet with parchment paper.
- Separate the egg whites from the yolks.
- In a clean mixing bowl, beat the egg whites until foamy.
- Add cream of tartar and salt, continue beating until soft peaks form.
- Gradually add sugar, mint extract, and food coloring while beating until stiff peaks form.
- Transfer the meringue mixture into a piping bag.
- Pipe small mounds of meringue onto the prepared baking sheet.
- Sprinkle rainbow sprinkles on top, if desired.
- Bake in the preheated oven for 1.5 to 2 hours. They should be dry.
- Immediately remove from cookie sheets and cool.
