Brookie calls these Apple Pie Cookies. Yummy sweet and fruity cookies!
Ingredients
Make The Filling:
Dates (Chopped): 1 Cup
Granny Smith Apples (Chopped, Finely, Peeled): 3/4 Cup
Granulated Sugar: 1/4 Cup
Orange Zest: 1 TSP
Oranges Juice: 1/4 Cup
Make the Cookie Dough:
Granulated Sugar: 1/2 Cup
Brown Sugar: 1/2 Cup
Unsalted Butter (Softened): 1/2 Cup
Vanilla Extract: 1 TSP
Large Eggs: 1 Each
All-Purpose Flour: 1 2/3 Cup
Table Salt: 1/2 TSP
Baking Soda: 1/2 TSP
Ground Cinnamon: 1/4 TSP
Instructions
Filling Instructions:
Mix all ingredients in a 1qt saucepan. Cook over medium-high heat, stirring constantly, until mixture boils and thickens. Boil and stir 5 minutes. Let cool.
Make the Cookies:
Beat sugars, butter, vanilla, egg in a large bowl in a mixer on medium speed until blended. Mix together and stir in dry ingredients.
Roll or pat the dough into a 16x8 rectangle between sheets of wax paper or plastic wrap. Remove top paper.
Spread dough with cooled filling. Roll up dough starting at the top (use the bottom wax paper/plastic wrap to assist you.)
Roll up and wrap in plastic wrap tightly and refrigerate 2 to 3 hours or until firm.
Heat oven to 375 degrees.
Cut roll into 1/4 inch slices and place on parchment paper on a cookie sheet. Clean the knife occasionally as needed as the filling will stick to it.
Bake 8 to 11 minutes until lightly browned. Cool on a wire rack.
