Filling for both oatmeal and pumpkin whoopie cookies
Ingredients
- Large Eggs (Beaten, Separated, White Only): 1 Each
- Milk: 2 TBSP
- Vanilla Extract: 1 TSP
- Powdered Sugar (Separated): 2 Cup
- Vegetable Shortening: 3/4 Cup
Instructions
- Mix egg white, milk, vanilla and one cup powdered sugar.
- Once thoroughly mixed, add the shortening and additional cup of sugar.
- On the cookies, spread a bit of filling on a cookie and cover with another cookie.
