Little puffs of rich nutty goodness covered with pine nuts
Ingredients
- Granulated Sugar: 1/2 Cup
- Powdered Sugar: 1/2 Cup
- All-Purpose Flour: 1/4 Cup
- Table Salt: 1/8 TSP
- Almond Paste: 1 Cup
- Large Eggs (Separated, Whites Only): 2 Each
- Pine Nuts: 3 Oz
Instructions
- Preheat oven to 300. Lightly grease cookie sheet or use parchment paper.
- Sift dry ingredients together and set aside.
- In a medium bowl, break up the almond paste with a fork. Add egg whites until well blended and smooth.
- With a wooden spoon, stir paste/egg white mixture into dry ingredients, mix well.
- Using slightly rounded teaspoon-fulls, roll dough into 1" balls.
- Place on prepared cookie sheet and press flat into 1 - 1/2" cookies. Sprinkle each cookie with several pine nuts and press into cookie.
- Bake 20-25 minutes until golden.
