Ingredients
- Granulated Sugar: 1 Cup
- Brown Sugar: 1 Cup
- Large Eggs: 3 Each
- Vegetable Oil: 1 Cup
- Vanilla Extract: 3 TSP
- All-Purpose Flour: 3 Cup
- Ground Nutmeg: 1 TSP
- Ground Cinnamon: 3 TSP
- Baking Powder: 1 TSP
- Table Salt: 1/2 TSP
- Baking Soda: 1 TSP
- Zucchini (Grated, Or More!): 2 Cup
- Walnuts (Chopped): 1 Cup
Instructions
- Preheat the oven to 325°F.
- Grease two 8 x 4 inch bread pans, or 6 mini loaf pans.
- In a large bowl, mix together granulated sugar, brown sugar, and eggs until well combined.
- Add vegetable oil and vanilla extract, mix well.
- In a separate bowl, combine all-purpose flour, nutmeg, cinnamon, baking powder, salt, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in grated zucchini and chopped walnuts.
- Pour the batter into a greased loaf pans.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
