Delicious chicken pot pie orzo skillet meal
Ingredients
- Chicken Breast (Diced): 1 Lbs
- Orzo: 1 Cup
- Chicken Broth: 2 Cup
- Heavy Cream: 1 Cup
- Unsalted Butter: 2 TBSP
- All-Purpose Flour: 2 TBSP
- White Onion (Diced, Small): 1 Each
- Garlic Cloves (Minced): 2 Each
- Country Blend Frozen Mixed Vegetables: 1 1/2 Cup
- Table Salt: 1 Pinch
- Black Pepper: 1 Pinch
- Thyme: 1/2 TSP
- Parmesan Cheese, Grated: 1/2 Cup
Instructions
- Dice the chicken breast into small pieces.
- Chop the white onion and mince the garlic cloves.
- In a skillet, melt the unsalted butter over medium heat.
- Sprinkle in the all-purpose flour and cook for 1-2 minutes to make a roux.
- Add the diced chicken, chopped onion, and minced garlic to the skillet. Cook until chicken is no longer pink.
- Stir in the country blend frozen mixed vegetables and cook for a few minutes.
- Gradually pour in the chicken broth while stirring continuously.
- Add the orzo and simmer 8-10 minutes until orzo is done and skillet thickens.
- Add the heavy cream, thyme, salt, and pepper. Simmer until the mixture thickens. Mix in parm cheese.
