Wonderful patties of fried corn bread my Grandma used to make.
Ingredients
- All-purpose flour: 1/2 Cup
- Baking Powder: 1/2 TSP
- Pepper: 1/8 TSP
- Salt: 1 TSP
- Eggs: 2 Each
- Corn: 2 1/2 Cup
- Onion (Chopped): 1 TBSP
Instructions
- Sift flour, baking powder, salt, pepper. Beat eggs slightly, add to corn.
- Add onion. Stir corn mixture into dry mix.
- Preheat electric skillet to 380 degrees. Drop batter onto greased pan.
- Fry - both sides until brown.
